A big dish was missing from the last entry...the Oil Down!
It is a traditional Caribbean dish that we attempted while the captain's sister was here and this is how it goes:
Meat: salted fish, salted beef, chicken and crab if you like. (soak the salted stuff to get rid of as much salt as possible)
Veggies: breadfruit, calalloo, plantanes, peppers, and well anything you like really
Other: loads and loads of coconut milk (can be made by essentially blending fresh coconut or you can forgo all the hassle and mess and get it ready made in a can) and dumplings
Calalloo, plantanes, peppers, meat and dumplings in the background
Peeled and seeded breadfruit goes in first
Meat next, then veggies
Pour all the coconut milk into the pot
Top with dumplings and cook slowly
The coconut milk separates and the oil is absorbed by the breadfruit thus the oil is down...
The pot was too small and even though the recipe said it was to feed four we had enough left over to feed a family for a week. Adrian said that although he was very sceptical, as it was supposed to be cooked in a poitjie pot over a fire, it was one of the best oildowns he's ever tasted!
